Tomato Sauce

2 kg tomatoes
½ cup olive oil
3 large onions, chopped
4 garlic cloves, crushed
juice of 2 untreated lemons
coriander
thyme
2 bay leaves
3 teaspoon sugar

Process tomatoes in a food processor. Heat oil in a large saucepan over medium heat. Add onions and garlic, cook until just soft. Add tomatoes and all other ingredients. Bring to the boil and simmer until sauce is starting to thicken. Remove bay leaves. Pass sauce through a mouli or a sieve. Discard the contents of the sieve and bring the sauce to the boil again. Simmer until sauce is thick. Spoon sauce into sterilized bottles. Preserve jars in preserving unit or place in a very large pot, cover bottles with water and bring to the boil, turn off heat and leave bottles in the pot until cooled.
