Chicken Stir-Fry with Plum Sauce

180g soba noodles 
1 tbsp olive oil
1 onion, chopped 
2 tsp ginger, crushed
2 garlic cloves, crushed
1 chilli, chopped
400g chicken pieces
1 carrot, chopped
1 red capsicum, diced
1 cucumber, sliced
100g snow peas, halved
1 cup cabbage or spinach
2 tbsp soy sauce
¼ cup plum sauce


Cook soba noodles.
Heat oil in a large pan and stir-fry onion, ginger, garlic and chilli for 2 minutes. Add chicken and cook for about 3 minutes. Stir in carrot and capsicum and stir-fry for 2 minutes. Add cucumber, snow peas and cabbage or spinach and stir-fry until heated through. Stir in soy sauce, plum sauce and soba noodles.

Serves 4
