Apple Streusel Cake

A great recipe for using windfall apples

100g butter
100g sugar
vanilla sugar
2 eggs
rind of 1 untreated lemon, 
    finely grated
200g plain flour
2 tsp baking powder
3 tbsp milk
500g apples

Streusel:
100g flour
75g sugar
vanilla sugar
75g butter


Preheat oven to 180°C.

Cream butter, sugar and vanilla sugar until fluffy, beat in eggs and lemon rind. Gradually stir in flour, baking powder and milk. Spread mixture into a greased round cake pan.

Peel, core and slice apples. Arrange apple slices on cake mixture.

Mix flour, sugar and vanilla sugar. Rub in butter with your hands until you have lumpy crumbs. Sprinkle over apples. Bake 45 to 50 minutes.
