Carrots 

Companion plant: 
Like: beans, chives, coriander, cucumber, lettuce, leek, onion, peas, radish, rosemary, sage, tomato, marjoram, marigold
Dislike: celery, parsnip

Sow mid September to mid March, harvest November to May, September to October

Varieties used:
Nantes (The Lost Seed)
Chantenay Red Core (The Lost Seed)
Danvers (The Lost Seed)
Berlicum (The Lost Seed)
Little Finger (The Lost Seed)
Amsterdam Forcing (The Lost Seed)
All Seasons (Goodman Seeds)

Mix seeds with sand and granulated peatmoss. Sow in rows 1m apart, thin to 15 cm apart. Don’t grow carrots in fresh manure or large amount of organic matter, or they will fork. 

Carrots develop slowly, soil must be moist all the time before they develop deep roots; also they cannot break through hard soil. In summer cover seeds with 1 cm of compost to retain moisture. Cover roots with soil in winter and spring to discourage mice and rats.

Tops have to be taken off carrots immediately

Don’t store carrots next to apples

Preserving:
We don’t preserve many carrots, as we have a good supply most of the year.
To freeze, select young carrots, remove tops, wash and peel. Water blanche whole carrots for 5 minutes or cut into slices and water blanche for 2 minutes. Cool quickly and freeze.
